We all look for quick, healthy and easy dinners to cook after a busy day, so here is one of my staples.
It is important to get a good balance of protein and vegetables for your evening meal. This mix is one of my favourites, if I feel quite hungry or have just come home from the gym and need a little bit more.. I add Quinoa.
Quinoa is a special grain, It doesn't really count as a carb as such, it's a protein. By adding Quinoa to your meals you are getting the carby taste and texture, without the carby results, FABULOUS!! A vegetarian option would be to just load on more vegetable options, perhaps tomoatos? spinach?. With the incorporation of Quinoa, you are getting in your protein!
Directions 1) Put 1/4 cup of Quinoa in a saucepan with 1/2 cup of water and bring to boil. Quinoa will be done once all water has evaporated. *Do not let the quinoa get to dry* 2) Cut up Chicken into a pan, spray with oilspray, leave to heat up. 3) Whilst chicken begins to cook, chop up vegetables of your choice. In this reciepe I have used Courgette, Peppers and Aubergine. 4) Once chicken is almost done, throw in the veg and continue to cook. Be sure to keep moving the ingredients around on the pan with a spatular. 5) Option: Pour the cooked Quinoa into the frying pan and cook a little long with the chicken and veg.
