Scrambled Eggs with a Kick

I really try to have a savory breakfast every now and again. As you probably already know, I am obsessed with Protein Pancakes, but it is good to mix it up a bit. Scrambled eggs are a tasty, protein filled breakfast, with wholemeal toast for slow releasing carbohydrates to keep your energy levels up throughout the morning.

Ingredients

2 eggs 2 TBS egg whites Himalayan salt Pepper to taste Sprinkle of cayenne pepper

Extras: 1 Slice wholemeal toast, vegetable oil free butter, spinach and chili flakes.

1) Heat pan with 1/2 TBS coconut oil. 2) Whip all of the above ingredients together in a bowl. 3) Pour onto pan whilst continuously 'smooshing' around with a spatula. 4) Once cooked, turn off the hob and let eggs to cook for a couple of minutes (keeps them from going rubbery by over heating) 5) Serve on a slice of toasted wholemeal bread topped with a bed of spinach 6) For the extra 'KICK' sprinkle on top chili flakes, really brings out a delicious flavour.
