Quinoa and Kale bowl

Quinoa is one of those things that are just a fantastic addition to your diet. It is actually a seed, but cooks like a grain! Better yet, it is one of the few planet based ingredients that are a complete protein. This means you are getting all of your essential amino acids from 1 source. This meal is time friendly, along with easy to prepare and is vegetarian, gluten and dairy free. Plus it is made purely with fresh ingredients.


Ingredients 5 tomatoes 1/4 courgette sliced small handful of kale sliced bell peppers 1 TSP coconut oil 1/4 cup of Quinoa 1/2 cup boiling water

How to Cook 1. Put 1/4 cup of dry Quinoa into a saucepan with 1/2 cup of boiling water. Put the lid on and keep popping back to give it a little stir. Once it reaches boiling point, turn the heat down a little and let cook until water is evaporated. 2. Cut of your vegetables and put everything except the kale in a frying pan with the coconut oil. 3. After 3-5 minutes add in the kale. 4. Once Quinoa is cooked, pour into the frying pan with the rest of the veg. 5. Mix it all up for a couple of minutes on low heat. 6. Bowl up!!
