Since going Vegan ive certainly swapped meat and poultry with pasta and caaaaaarbs <3 I will be writing a full blog post on this soon but before I do, enjoy this lovely Pasta with a nice glass of red wine!
12 Cherry tomatoes, quartered
Tbsp of chopped jalapeños
Handful of olives
2 crushed garlic cloves
Tbsp Olive oil
Tbsp balsamic vinegar
1/2 tsp each dried basil, thyme, rosemary, oregano (or 2tsp herbs des provences)
Salt and pepper
Broccoli pasta (I found this in Waistrose - Pastella)
In a frying pan on medium, cook tomatoes, garlic and jalapeños in olive oil for about 5 mins until softened.
Add the olives, and herbs cook for another 2 mins
Add the honey and vinegar
Season with salt and pepper
Cook the pasta, drain and add to pan to combine with sauce
