Granola is one of my favourite breakfasts, so nutty and crunchy! Granola is one of those breakfast where I need minimal preparation, or am not overly hungry in the morning (which is not very often) It is just great as another breakfast option. The trouble is, there are so many brands out there, it's hard to know which one to pick! Unfortunately, you have to be SO careful when picking one from the cereal isle because 9/10 they are loaded with added sugars which is not ok.
There are a couple of brands out there that are NutriPaige approved, for example Rude Health. However these can tend to be expensive and you get about 3 bowls out of the box. I have thrown together the most simplest recipe that just cannot go wrong, all you need is a couple of ingredients, throw them all together and bake.Ingredients
2 cups of rolled jumbo oats 1 handful of seeds (I used a mix of pumpkin, hemp, and linseed) 3 tablespoons of sunflower oil Cinnamon (the more the merrier) Maple syrup or Agave Raisins Crushed pecans 1 tablespoon of chia seeds
1. Preheat oven at 150 degrees 2. Mix oats, seeds, chia seeds, cinnamon sunflower oil and agave in a bowl 3. Evenly spread the mixture on a baking tray with parchment paper 4. Bake in the oven for 10 minutes 5. Remove from oven and add the crushed pecans and raisins, if a little dry, add more sunflower oil 6. Place back into the oven for a further 5-10 minutes until oats have gone golden. 7. Leave to cool and store in an air tight container.
This batch can last you up to a couple of weeks (unless it is too yummy and you eat it all first!)
This 'easy-peasy Granola' goes perfectly with any natural nut milk or even a large scoop of Greek or coconut yoghurt, YUM!!
