This is a very simple (as always) lunch that just works! The salad is a mix of lettuce, spinach, peppers, tomatoes, celery and avocado mixed up with some balsamic vinegar and juice of a lime. Separately cooked is a 1/3 cup of quinoa and prawn, and that's it! It took my all of 10 minutes to make this without too much thought process. It is so much easier to make healthy meals when your cupboards are stocked with the right foods. Protein from the prawns, Carbohydrates from the quinoa, Fats from the avocado and lots of veggies for vitamins! Now that is the best combo for a mid-day meal. This has the ability to repair muscles and provide you with energy for the rest of the day.
