This meal is one of my favorites at the moment, it is so easy to make, so quick and SO healthy. There is not 1 'bad' thing about it, so you can enjoy it in abundance!
As you may or may not have noticed through my instagram posts, I have recently become Vegetarian. I have a keen interest on the effect of nutrition on our overall health and I am so eager to figure out the best, most natural way to eat, and most of all most satisfying. I have learnt SO much and it has really opened my eyes into different lifestyles and theories through many published doctors and nutritionists. I do not have all the answers, nobody does! I just feel like each day more and more of the health, nutrition and food industry is making sense to me. I want to share my journey with you! I am not ever going to preach of force you all to become vegetarian with me, I just want to provide you with enough knowledge for you to make your own decision. I am still figuring out the kinks, how it works with my body and experimenting with different dishes. I won't go into too much detail on the elements that 'turned me' but if it is something you would be interested in learning more about, please let me know for future posts!
Regardless if you are vegetarian, vegan, pescatarian or a meat eater.. this Avocado Pesto Courgtti is deliciously filling and full of flavour.
If you haven't jumped on the spiraliser band wagon, I strongly suggest you check it out! This little contraption turns any vegetable into pasta/noodle dishes! Courgette is the most popular and the best part is you can just eat loads of it because, well it is just a vegetable! Vegetables are low carb and full of nutrients. There are lots of different types you can by that I have linked below to help you out.
I have Zoodle Chef because it is handheld and can easily be stored away. It takes a little more arm power to make the courgetti but avoids cluttering up my kitchen with even more kitchen appliances. Plus it is the inexpensive option at £15.99
There is another style which is larger Spiralz at £29.99 which is is a hefty contraption but super quick and easy to use!
1 large bunch of basil 1/2 garlic glove 40g pine nuts (or walnuts) 60ml Olive Oil Squeeze of 1/2 lemon 1 avocado Courgetti 2 Courgettes per person Cherry tomatoes 1 TSP coconut oil
1. Spiralise your courgette
2. Pop all of the above ingredients into a food processor or blender and process until smooth
3. Saute courgetti in a frying pan with a little coconut oil or leave raw
4. Mix it all up and serve with cherry tomatoes.
I hope you enjoy this super easy dish! I with most of my meals make extra and pop it in the fridge to grab on the go! A little portion of this is great for a snack too!
